Plantain Paradiso, Hotel Villa Bella
1 plantain, sliced lengthwise
3 stalks callaloo or spinach
1 stalk fresh chives
2 tablespoons butter
Fry plantain in oil. Cook both sides until golden brown. Place on plate
to drain.
Steam the callaloo and chives in butter. Add salt and pepper to taste.
Cook until soft. Drain and place callaloo in plantain slice and roll.
Secure with toothpick. Serve with cocktail sauce of choice. Yields two
servings.
