One Mix Up

This recipe by Althia Salmon of St. Andrew was selected by the National Culinary Arts Competition as a winner in 1996. Recipe courtesy Jamaica Tourist Board.

237 grams green banana, grated
340 grams flour
Pinch salt
170 grams sugar
175 grams margarine
28 grams baking powder
1 egg
1 gram baking soda
125 ml coconut milk
230 grams raisins
4 grams mixed spice
2 grams cinnamon
5 ml vanilla (Salmon recommends Jamaica's Benjamin vanilla)
2 grams orange rind

Cut margarine into flour. Add all other dry ingredients. Add banana, egg, milk and raisins; stir until blended. Drop by spoon or pipe on a greased baking sheet. Bake at 350 degrees F until done.
